[:it]Il Risotto alla Milanese è il classico dei classici, ma resta comunque il sempreverde della cucina italiana.
Per fare un risotto è necessario il burro. Usare della margarina vegetale o dell’olio, ahimé, non è la stessa cosa, non sarà mai cremoso come quando si usa il burro.
L’olio invece viene generalmente usato per i risotti a base di pesce.
Ingredienti per 2 persone:
1 bicchiere grande di riso carnaroli
1 litro circa di brodo di carne o vegetale
burro
cipolla bianca o gialla
zafferano, meglio se in pistilli
1/2 bicchiere di vino bianco
midollo
Tritare finemente la cipolla e metterla a rosolare con del burro in un pentolino. A parte, nel frattempo, sciogliere il burro nella casseruola da usare per cuocere il riso. Non appena si sarà sciolto, calare il riso e farlo tostare con il burro per circa due minuti. Controllare la cipolla che nel frattempo sta rosolando sul fuoco facendo molta attenzione a non bruciarla. Deve semplicemente imbiondire un poco, altrimenti darebbe un gusto amaro al risotto e si sceglie di cuocerla a parte proprio per evitare questo inconveniente. Fermare la cottura togliendo dal fuoco il pentolino e mettendoci un poco d’acqua.
A questo punto sfumare il riso con mezzo bicchiere di vino bianco ed aggiungerci la cipolla. E’ molto importante avere tutto il necessario a portata di mano prima di accingersi a cucinare il risotto perché bisogna girarlo in continuazione. Lasciare un risotto senza controllarlo comprometterebbe la riuscita del piatto, va coccolato come un bambino.
Cominciare ad aggiungere il brodo che avrete precedentemente preparato, un mestolo alla volta facendo molta attenzione che nel riso non ci sia mai troppa acqua e che non arrivi mai ad asciugarsi. Questo aiuterà a raggiungere la cottura ottimale del riso che non deve essere mai morbido né tanto meno farinoso sotto i denti.
Poco prima del termine della cottura aggiungere lo zafferano sciolto in un po’ di brodo. In questo caso la quantità è a piacere, dipende da quanto si desiera giallo il risotto.
Spegnere la fiamma e mantecare col midollo e una manciata di parmigiano reggiano grattugiato, mescolare bene e servire. Se non si disponesse del midollo si può usare una noce di burro.
Una volta impiattato tritare del pepe sul risotto, esalterà il gusto della spezia.

To make this kind of risotto you’ll need to use butter (using margarine or vegetable oil is not the same thing. It will never be as creamy as when using butter).
The olive oil is instead used for seafood risotto .
Ingredients for 2 people :
1 large glass of Carnaroli rice
About 1 liter of vegetable broth
butter
white or yellow onion
saffron , preferably in pistils
1/2 cup white wine
1 veal shank
Chop the onion in small bits and fry it with some butter inside a small saucepan. In the meantime , in another large pan that you’ll use to cook the rice , melt another slice of butter. When the butter is ready, put the rice in and toast it for about two minutes .
Check if the onion is getting brownish, but make sure not to burn it. Just fry it for a short little, otherwise it would give a bitter taste to the risotto if it gets overcooked. When it’s ready take the small pan away from the flame and put some water in it.
At this point, blend the rice with half glass of white wine and add the onion . It ‘s very important to have everything you need at hand before you begin to prepare the risotto because you have to stir it all the time. Leaving the rise without supervising it would jeopardize the success of the dish.
Start adding the broth that you have previously prepared, little by little , making sure that the rice is never covered with too much water, but be careful that it never runs dry. This method is the best way to cook rice. This way it won’t be too soft nor mealy to eat.
Shortly before the end, add the saffron that you have previously dissolved in a cup with some of the broth. In this case the amount is arbitrary , depending on how yellow you want your risotto to be.
Take the risotto off the flame and stir in with the veal shank and a handful of grated parmesan cheese. Mix well and serve. If you don’t have the veal shank you can use some butter.
Serve it hot on a plate and sprinkle with pepper. The pepper will enhance the taste of the saffron spice .[:]

Mettere a cuocere la pasta in abbondante acqua salata, nel frattempo mettere il Pecorino Romano grattugiato in un’insalatiera, aggiungervi una tazzina di acqua molto fredda e un po’ d’olio extravergine, mescolare fino ad ottenere una crema.
Cospargere di abbondante pepe fino ad annerire la superficie della crema.
Scolare la pasta con un mestolo bucato direttamente nell’ insalatiera e girare velocemente stando attenti che il formaggio non si sciolga.
A questo punto impiattare e passare un’altra macinata di pepe.
