[:it]La Fricassea è un tipico condimento umbro per le carni del coniglio, del pollo e dell’agnello. Viene preparato quasi tutto l’anno eccetto che l’estate.

Ingredienti per 4 persone:

1 Coniglio intero

3 Carote

1 Costa di sedano

1 Cipolla

1 barattolo di pomodori pelati

Olio EVO

Sale

1 uovo intero

Succo di 1 limone

Fare a pezzi il coniglio e metterlo a marinare in acqua e aceto per qualche ora (un bicchiere di aceto di vino bianco in 2 litri d’acqua).

Mondare e tagliare grossolanamente carote, sedano e cipolla, con cui preparare un soffritto con olio extra vergine d’oliva in una casseruola capiente.

Aggiungere i pelati schiacciati con la forchetta, salare e far insaporire per qualche minuto; a questo punto aggiungere i pezzi di coniglio sgocciolati e asciugati, portare a cottura coperto.

Una volta cotto togliere i pezzi del coniglio, passare tutto il sugo di cottura al passaverdura e rimetterlo in casseruola. A parte battere un uovo con un pizzico di sale ed aggiungere il succo di un limone spremuto e privato dei semi.

Rimettere la casseruola sul fuoco, unire l’uovo battuto col limone e mescolare velocemente per evitare che l’uovo si cuocia.

Quando la salsa sarà diventata omogenea e di un bel color arancione adagiarvi il coniglio e far insaporire qualche minuto.

[:en]The Fricassee is a typical Umbrian seasoning for rabbit meat, chicken and lamb. It’s prepared for most time  of the year except  summer.

Ingredients for 4 people:

1 rabbit

3 carrots

1 stalk of celery

1 onion

1 can of tomatoes

Extra virgin olive Oil

Salt

1 egg

Juice of 1 lemon

Cut the rabbit into pieces and put it in a large pot with water and  vinegar and let it marinate for a few hours (a glass of white wine vinegar in 2 liters of water).

Peel and roughly cut carrots, celery and onion, and fry them in a large saucepan with extra virgin olive oil.

Add the tomatoes, mashed with a fork, add salt and cook for a few minutes. At this point add the rabbit pieces, drained and dried, and cook it covering the saucepan with a lid.

Once the rabbit is well cooked  remove the pieces and mesh all the cooking juice with a mill, then put it back in the saucepan. Whip an egg with a pinch of salt and add the juice of a lemon.

Put the saucepan back on the flame. Add the whipped egg with lemon and stir quickly to avoid overcooking the egg.

When the sauce will become smooth and   orange,  add the rabbit and cook for a few minutes.
