Per 2 persone

1 confezione di aringhe affumicate

1 litro di latte intero

1 confezione di panna acida

Olio EVO qb

2 cipolle

aneto (va bene anche secco)

pepe

sale

senape à l’ancienne

Disporre le aringhe affumicate in una terrina a bagno nel latte, in modo che siano coperte,  per 24 ore circa.

Il giorno seguente scolarle ed asciugarle su della carta assorbente. Disporle quindi a strati con le cipolline tagliate a rondella, aneto e pepe. Si raccomanda di non aggiungere sale.

Nel frattempo avrete cotto a vapore o bollito delle patate, tagliatele a rondelle e disponetele accanto alle aringhe con un pizzico di sale, sempre e solo sulle patate. Condire quindi con un’emulsione di panna acida, olio evo, aneto e un cucchiano di senape à l’ancienne, ovvero quella coi grani interi.

Qualora non si disponesse della panna acida, si può sostituire con della maionese, oppure con dello yogurt greco magro con l’aggiunta di succo di limone.

Per un profumo migliore, qualora si disponesse di aneto secco, sarebbe opportuno reidratarlo e scolarlo prima di aggiungerlo all’emulsione.

Ingredients for 2 people

1 box of kippers (smoked herrings)

1 liter of whole milk

1 cup of sour cream

Extra virgin olive oil to taste

2 onions

dill (maybe dry)

pepper

salt

mustard à l’ancienne

Place the smoked herrings in a bowl. Cover them with milk and let rest for about 24 hours.

The next day, drain and dry the smoked herrings with paper towels.  Place them on a large plate and cover with onions cut into washer, dill and pepper. It is recommended not to add salt.

In the meantime steam or boil the potatoes. When they’re ready cut them into slices and arrange them next to the herrings with a pinch of salt, (always just over the potatoes). Then season with an emulsion of sour cream, extra virgin olive oil, dill and a teaspoon of mustard à l’ancienne, or the mustard with whole grains.
